The weather outside is not actually friendly, but if you try to warm your family’s senses up, it can be a magical time. Spending winter short and gloomy days with your loved ones is all about family warmth and enjoying each other presence, reading out loud to your kids, watching a movie, cooking together and staying at the table peacefully, having some simple and genuine delights.

My last recipe idea was a super fast lunch/dinner proposition for those who loves veggies and avoid meat. But this time the recipe will be sweet, not salty!
As we always try to work with seasonal fruits and veggies, I found this classic Mediterranean pear and chocolate cake recipe and I transformed it in a way it meets our complicated family special dietary needs! Really as fast as lightning!

Ingredients:
- 5 ripe pears
- 2 eggs (room temperature)
- 60g plant-based butter (softened)
- 200g coconut blossom sugar (or the brown one)
- 100g rice flour
- 100g almond flour
- 2tbs baking soda
- 1tbs ground vanilla seeds
- 5tbsp coconut yogurt
- 2 handful of bitter, pure chocolate chips (also for topping)

Preparation:
Preheat the over up to 190C.
Peel and cut in pieces your pears. If too juicy – dry with a paper kitchen towel. Set aside.
Beat eggs with sugar and vanilla until fleecy for about 10 min.
Add softened butter. Continue beating.
Add flour, yogurt and baking soda. Beat gently.
When uniform, add chocolate chips and fold with a silicone spatula.
Put the batter inside a cake tin. Use 28cm cake tin.
Stick your sliced pears into the butter and sprinkle additionally with a few chocolate chips on top.
Bake for 50-60 min.
Cool it.
