HOMEMADE means much more than cooking together

It’s not all about my unlimited love for pots and kitchen robots (not only at least). Reading all labels and searching exclusively genuine and less treated ingredients possible is not my cozy and nerdy hobby. Not even because I have the opportunity to own some ‘free’ time to spend cooking and searching for new recipes, modifying the old ones so they will meet my family’s special dietary needs. Believe me, I learned all those kitchen tricks because I was forced. The necessity is the mother of invention they say!

I don’t want to sell you at any costs the idea of me eating 100% gluten-free, sugar-free and absolutely no pizza to go. It’s not true. The truth is that to help my son to evolve and deal with his developmental issues, when he turned 4, shortly after the diagnosis, I introduced strict gluten-free, dairy-free, yeast-free and sugar-free diet that accompanied the ABA/VB therapy. All my pantry was filled with organic food, organic spices, organic cleaning products, and cosmetics. The combination of those factors gave us amazingly good results in a relatively short time.

Well tailored and balanced diet can drastically improve your well-being and reduce some of symptoms that can be linked to food intolerances etc.

There are certain ingredients in processed food that are harmful lot more to those on the spectrum. Some of them are intolerant to gluten or lactose, some have food sensitivities or strong allergies that can be avoided only if their food is home cooked with simple, not elaborated and pure ingredients. Without preservatives and colorants.

Most of the cold cuts , sausages, lunch meat etc coming together with sodium nitrate and nitrite, BHA and BHT, preservatives and unbelievably high-level of salt.

If you are not a vegan and you treat yourself with a bit of meat from time to time, it’s better if you prepare it by yourself and see the deli meat corner from a certain distance. Remember – simpler is better. And healthier!

From the other hand, this whole home cooked food idea came much earlier from a really bad experience if talking about German cuisine and their really pure product choices. It started with banishing completely German semi and full processed food, instant food and avoiding restaurants serving German cuisine. Sorry Germany, your bread and even your potatoes are not the best as they say!

I started to bake my own homemade gluten-free bread. And bread similar like Focaccia Genovese. It’s really rare to see me in a bakery as long as I have some flour and brewer’s yeast. Focaccia is easy to prepare, although it’s better to work the dough with your bare hands and then it needs time to ‘work’ in order to become a fluffy and soft oven-baked bread. Another important point is how to reduce food waste. Every single day there are billions of tones of good food just thrown away! A third of food is wasted, making food waste the third-biggest carbon emitter. It’s unthinkable! There are initiatives like REFRESH and it runs from July 2015 until June 2019. Big projects will make things done hopefully but you have to try to start from your own household.

Have you ever has a punch of boiled potatoes that nobody wanted to have during the lunch day or two before? Well, I bet you’ve had! My proposition is a graceful and very tasty Gateau. For those who go vegan, you can replace the ham with seitan or even roasted red bell pepper for example. Use veg Parmigiano cheese instead of the original one, plant-based milk and butter and you are very welcome and happy! Other options are my son’s beloved Gnocchi. Fast healthy and what’s more important tasty and happy!
