Recipe – Apple Walnut Muffins

Muffins are a wonderful, year-round delicious treat! Perfect for breakfast on-the-go, part of your child’s school lunchbox, or an afterschool snack. It’s also an easy recipe to get your child in the kitchen helping you pour, mix, and be involved in the baking experience!

Once you establish a base, you can mix up the fun additions, whether it’s different fruit or a variety of nuts and seeds.

Today we’ll share a recipe for Apple Walnut Muffins! Packed with fresh apples (full of fiber and antioxidants) and walnuts (promotes a healthy gut, full of antioxidants, and a great source of omega-3s), this recipe is a simple way to add in healthy food options to your family’s meal rotation.

Recipe:

Ingredients: (makes 12 muffins)

  • 3 tablespoons canola oil
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1 cup applesauce
  • 3/4 cup apples (peeled and finely diced)
  • 1 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 cup chopped walnuts
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 3/4 teaspoon allspice

Steps:

  1. Preheat oven to 400 degrees Fahrenheit.
  2. In a large bowl, beat together the oil, brown sugar and egg until smooth. Add in applesauce and diced apples. Stir well.
  3. In a separate bowl, mix together the dry ingredients, nuts, and spices. Stir into the applesauce mixture (until moistened).
  4. Line a muffin pan with paper muffin liners. Fill and bake for 15-18 minutes. Let muffins cool in the pan, then remove from pan and cool on a rack.
  5. Enjoy!
