Express GF/CF shortbread cookies

 

I won’t lie. I do not know how to cook. Really. Worse. I do not even follow recipes… At all…. I fail as often as no one else experimenting new formula or transforming the old one just to make it less boring.
How many times I made slack-baked bread, my cookies was completely salty or tough as stone with aftertaste of sawdust.
Fortunately not everything is so useless as it seems.
I have a few creations that I’m proud of especially because my family enjoys them a lot.
Today I will reveal my secret mix for amazing GF/CF shortbread cookies which could be also used as the base for a pie. Amazing and priceless because of the super fast preparation and really good taste.

The preparation is very easy and fast. As I do not really like ‘ready-to-bake’ flour mixes available in the malls, I prefer to mix what I want so I can always change the proportions as I wish.

You will be done in 40 minutes!

You only need:

FlourMix

1 cup integral rice flour
1 cup teff flour (or corn flour)
1 cup potato starch
1 cup integral brown sugar (or 1/2 cup stevia sweetener or other sweetener you usually use)
170g plant margarine (or 1 cup of extra vergin olive oil)
1 whole egg and 2 yolks
1 lemon (peel to be grated)
1 tea spoon salt
you can use also some essence drops for baking or freshly grated vanilla pod

Mix flour together with sugar, salt and cold (not melted!) butter in pieces. I use my Braun Hand Blender Multi Quick  that makes his job gloriously.
You can do it also with your hands, it basically takes you just a few minutes longer but the result is quite same.
When all the ingredients are well mixed together put the eggs inside and grate some lemon peel previously washed with hot water.
Knead the dough into a uniform mass. Fold it, press it and stretch it for a few minutes.

Now you can choose what shape you want your cookies. Bake for at least 15 min in 180 grades C. Remember: thin – bake 15 min max, if thick – 20 min max. Just make them catch some golden colour.
You can put also frosting on top if you want or melt some vegan chocolate to decorate them.

P.S. If you are not on GF/CF diet you can use every kind of flour you like, butter instead of margarine. The most important thing is the dough should have the consistency of fresh, newly opened PlayDough. You can always add some flour extra or pour some drops of olive oil to make it as it should be.
