Does your child love pasta but you are sick of preparing it always in a same and boring way, using ready sauces with ingredients that you are not really happy about and you are convinced that if you cook something different it will die alone on your child’s plate not even considered to be a ‘food option’?
Here you have an amazing, super easy and quite chip recipe! Tasty, kids-friendly and you can keep it in your fridge for 5 days! Nice solutions for those in a constant rush.
You need an oven and a blender mixer.
ROASTED CHERRY TOMATOES PESTO
Ingredients:
1kg of small cherry (or other type) tomatoes
2 tbs of aromatic salt (check my older post Herbs Mix – Fresh. Pure. Homemade.)
5 tbs of not filtered extra virgin olive oil
Preparation:
Wash, dry and cut tomatoes in half. Distribute them equally cut part up on baking paper and sprinkle with aromatic salt and olive oil.

Bake for 60-80 min at 160C.
Once they are baked, you can directly mix them in a food blender adding some extra ingredients if you wish – nuts, tofu, or seitan.
Ready!
You can dress pasta with this flavorful homemade red pesto or serve it as a side dish, starter or a dressing for bruschetta.
And if you are creative and ready to take a risk, you can try this same recipe just changing the veggie. Use eggplant or zucchini, red bell pepper or leak. Red onion, broccoli or cauliflower!
