Spring spring spring! The weather is finally much better now and with the good weather comes along our need to change from the heavy winter diet to more light and fruity one.
We love pankaces, we love pie and we are also fed up with supermarket jams with 15% of fruits, full of sugar and ‘natural flavours’ ready to be spread on. Even if you buy food in bio markets you have to be very careful about the content of any jar you purchase and nightmares hidden in the encoded names absolutely incomprehensible for a human being. Especially if you are on GF/CF and MSG free diet.
Time you spend reading labels in the store, better use it for experimenting in your own kitchen and create some masterwork with all known and ‘wanted’ ingredients inside. It’s definitely priceless.
When the winter is finished I always wait for the strawberries, the ‘real ones’ as I call them. With the taste of the real strawberry, juicy and sweet enough for some sweet kitchen project, raw and pure in it’s content.
Today I propose my super fast, organic and completely without cooking strawberry fresh pureed mousse. Simple and soooo tasty. Once you try it you will become addicted to it! Guaranteed!
Ingredients:
500gr of well washed and dried strawberries
3 spoons of brown sugar or other sweetener (I often use stevia mix but the quantity to use in this case may vary depending on the brand of the product)
Instant pectin
One word about the last ingredient. If you are in the EU zone you can use one great invention such as Biovegan Kofitura without cooking. It’s a german product, completely vegan mix of ingredients like potato starch and guar gum. It densifies your muse and makes it more spreadable and less liquid.
If you have to find some other solution for that matter, try some pure pectin. BUT (!) just be sure it’s the instant one, not the regular one. In order to make it fresh and not cooked you will need the instant solution.
Preparation:
You need to make ready the very ingredient and you have to do it extremely carefully. Check each fruit closely to avoid mold. This part of the preparation is the most important. Take all you strawberries and put them in the blender. If the size of the fruits is irregular, just cut them in smaller pieces just to be sure your blender will mix it on a smooth and uniform pulp.
Put the sugar inside and your thickener (instant pectin or one packet of Biovegan ‘magic-mix’).
Blend everything as long as you see the mass is homogeneous. It should be dense enough to stick to the spoon.
Put the mousse in before boiled and neatly dried jars and store it in the fridge.
Remember to consume it fast as the product is totally without preservatives.
