I imagine you don’t have time in the morning. Me neither. In fact I usually use some super extra fast breakfast solutions during the the school days like bread and jam or cookies (shame on me). But as soon as I can manage to cook something nutritious and delicious I definitely do it. I will propose a quick mix of pure and nutrient ingredients for an amazing morning energy booster.

Banana pancakes without glutine and without milk (recipe for 2 kids or one very hungry grown ups 🙂 )
2 bananas
1 egg (or 2 tbs of sparkling water)
2 tbs of sugar (brown, coconut flower sugar or whatever you use as a sweetener)
1 pinch of cinnamon
5 tbs of brown whole rice flour (or other glutine free one)
1/3 tbs of rising powder (I use a simple and pure sodium bicarbonate)
2 tbs of fresh soy fromage frais or soy yogurt
If you have egg allergy/intolerance you can replace it with a bit of sparkling mineral water. Works!
If you don’t use sugar ‘in any form’ you can skip it as bananas usually are sweet enough when ripe.
Fry without fat on a non-stick pan and serve with fruits/maple syrup/marmalade etc…
