Frozen red fruits in a light version cake

Ingredients:

5 eggs

1,5 cup of coconut blossom sugar (if other sweeteners only 1 cup)

1 cup of sunflower oil

1,5 cup of mixed rice-almond-tapioca flour

1 tsp baking soda

500g frozen red fruits (you can use only one kind if you want)

Preparation:

Remember that all ingredients should be room temperature.

Separate egg whites and mix them at high speed adding sugar after a while.

Continue mixing.

Add yolks.

Add oil.

Mix flour with baking soda.

Add to the rest and fold gently.

Put your ready mixture inside a 30x20cm baking mold.

Add fruits on top.

Heat the oven up to 175ºC.

Bake mx 55min.

Ready!
